Cook - Poulet* DG

Seasons your chicken in a cameroonian way
For 6 persons : 1 chicken, 4-6 fingers of fairly ripe plantains**, 3-4 tomatos, 1 onion, a clove of garlic, 1 pimiento, 1 lemon, 3 large carrots, 1 pinch of white pepper, curry, condiments (like grass of Provence or green anise), thyme, parsley, celery, refined oil, 1 hot red pepper if desired

* Cut chicken in fine pieces and put it in an adapted pan
* Mince half of onion on the pieces of chicken
*Add salt, thyme, garlic, juice of lemon and 2-3 glasses of water
* Cover the pan and let macerate with average fire 20-30 mn

During this time
* Mince the rest of the onion
* Mix tomatos, pepper and condiments
* Cut carrots in small dice and hash sweet pepper in thin strips
* Put a little oil in a pan and let heat approximately 1 minute
* Add plates of sweet pepper and onion, dice of carrots. Let simmer 2-3 mn. Not forget to stir.
* Add mixed tomato. Again, Let simmer 5-6 minutes.
*If the chicken is ready, add it with its marinade. To lengthen with water if necessary. Let simme 15-20 mn.

* Peel the plantains**
* Cut them in dice or others forms according to your desire
* Make fry them in oil.

* At the end of the cooking of chicken, add the fried plantain**.
Again, Let simmer approximately 5 minutes by checking the seasoning

Serve tepid, with or without an additional garnishing (rice for example).
